About HUALALAI COFFEE - Grown in the Kona coffee district on the Big Island of Hawaii.


The Pacific Ocean surrounds the pristine Hawaiian archipelago - untouched by any continent.
Its closest large land mass is 2,500 miles away.
The Big Island was formed by five volcanoes and is the youngest and largest of the 8 Hawaiian islands.
It also houses the largest volcanoes. Mauna Loa the active one and Mauna Kea the dormant one are the most well-known.
The estate is located on the slopes of dormant mount Hualalai at the Northern end of the Big Island.

The Kona district is blessed with the perfect conditions for growing coffee:
high elevation, rich volcanic soil, morning sun and afternoon clouds, frequent showers, cool temperature, lack of strong winds.
The origin of its water source is colossal in size with a monstrous endless daily discharge.
The volcanoes are black porous rock which is the primary reason for its rain water to be naturally filtered and
silky smooth to the taste graced with rich organic minerals. This is truly a World Class water.

Ever since Hawaii's first commercial coffee crops were planted in the cool, lush uplands of Kona in the 1840's,
coffee has been a vibrant part of Kona's lifestyle and economy.
Rich, robust Kona coffee is now savored by gourmets around the world.
The growing conditions found at the prime coffee growing region on Mt. Hualalai greatly contribute to the uniqueness of Kona's coffee.

In certain spots of Kona, between 1,200 and 1,500 feet, the rainy season coincides with the active coffee bean developing period - spring and summer months. During this time, the mornings are usually sunny, with the afternoons being overcast and periodically rainy.
Also, Kona coffee is grown on relatively new ground.
The volcanic soil is fertile and has excellent drainage, compared to growing regions on the older Hawaiian Islands or elsewhere in the world.

Kona Coffee constitutes less than one percent of the world's total coffee supply.
The majority of Kona coffee is harvested between the months of July and December.

Coffee Processing

At Hualalai Estate Kona coffee, they pride themselves on producing a smooth, full-bodied coffee without any bitter aftertaste.
The roast their premium coffee in small batches and do not warehouse any products, which ensures that their coffee is always fresh.
This area separates Hualalai Estate Kona Coffee from much of the competition.
They have used the knowledge of a well-respected local miller and coffee expert, to make Hualalai one of the best coffees in the world.

    Picking - Hualalai Estate makes sure that the coffee beans are hand picked red to give it its greatest full-bodied quality.

    Pulping - Hualalai ensures that pulping or wet milling takes place shortly after picking.
That "immediacy" factor eliminates any sour aftertaste.
If coffee cherry, what coffee is called before the red pulp is removed, is allowed to ferment in the burlap bag,
the taste of the coffee will be negatively affected, even if it sits for only a day.

A cherry pulper is basically a metal cylinder with stripping knobs that squeeze and remove the husks from the coffee beans.
The husks are sent back into the fields for use as fertilizer.

    Drying
- After pulping, the coffee beans are rinsed with fresh water and sun dried on drying decks as quickly as possible.
The now green coffee beans are raked every hour throughout the working day for about a week to allow it to dry out.
It must be noticed that some farms do not adequately dry their coffee before the coffee starts to mold.
This coffee is rarely dumped, and you can taste the mold even after it has been roasted.

    Storing - After the coffee is dried, it is bagged in clean burlap bags and stored in dehumidified rooms.
Coffee at this stage is called "parchment" because of the paper-like membrane covering the coffee bean.
The coffee can be kept for years in this state without molding as long as the storage rooms are dehumidified and cooled.
Hualalai Estate periodically roasts batches of "aged" coffee that have been stored for 2 or more years,
where the aging has eliminated the "bite", causing the coffee to be smoother and very full-bodied, much like a quality vintage wine.

   Grading -  The grading process is important because it is a product assurance program that is designed to
maintain the integrity and distinction of quality in the different grades of Kona coffee.
Lastly and shortly before for roasting, the mill removes the parchment membrane - called dry milling.
Kona Coffee beans are graded by size, weight and number of imperfections.
The biggest beans are prized and most rare.  Also, the most expensive.

Two different machines perform two different steps.
The first step sends the Kona coffee through the classifier machine which sorts the coffee according to size.

The second step sends the Kona coffee through the air-flowed gravity machine which sorts the coffee beans
according to weight into the various grades: Extra Fancy, Fancy, No. 1, Prime, and below.
Anything below Prime is immediately tossed out by Hualalai Estate or used as mulch in flower beds.

The green coffee is sampled by the State of Hawaii Department of Agriculture and is certified to grade, quality, and certificate of origin.

Prime grade Kona beans still have a very rich taste and a full, smooth flavor.  They are, after all, still pure Kona coffee!
Because prime beans are smaller than the other Kona grades, the lower price makes it great for every day drinking.

Ironically, due to the lower cost of the economically priced Prime Kona Coffee beans, they can be hard to get.

Prime Kona coffee beans are often bought up by mainland coffee roasters to blend them with coffees from around the world.

Coffee Roasting Techniques

This is another major factor that separates Hualalai Estate Kona grown coffee from the other Kona Coffees.
Hualalai has experimented with many, many temperatures to find the one "Best" roasting temperature for each coffee bean based on professionally-trained palettes to bring out the nuances of each bean.

Also, using a gravity machine ensures that the coffee beans will be the same size (density), all of the coffee will roast at about the same rate.
If they didn't, smaller - lighter beans would roast faster than larger beans which would give the coffee a burnt taste.
If all beans are the same size, the roast will be uniform with no bitter, burnt aftertaste.
Hualalai prides themselves on that aspect of their coffee.

A lot of farms that market their own coffee do not produce enough coffee to make it worthwhile to separate the
bean sizes so the crop is combined together, sometimes creating a burnt taste when roasted.

Once roasted, Hualalai Estate coffee is then packaged and sealed in a decorative gold colored bag with a
one-way valve that let oxygen out but does not let it in.
The coffee in the bags, still warm from roasting, releases carbon dioxide into the bag,
pushing any oxygen in the bag out through the one-way valve - a natural preservative.


Coffee Shipping
When the coffee is then shipped to you through the air, the atmospheric pressure difference sucks any carbon dioxide in the bag, out of it.
Sometimes making the coffee pack hard like a brick or changing it's shape.
This does not affect flavor or freshness.
Simply open the bag and the grinds and beans return to their original loose condition.
